Sourdough Discard Pizza – Easy Cast Iron Skillet Recipe

Let’s talk about one of my favorite ways to use up sourdough discard — a bubbly, golden sourdough discard pizza baked right in my cast iron skillet. It’s rustic, delicious, and comes together fast with whatever toppings you have on hand.
The best part? No measuring. Just a hot skillet, your discard, and a handful of fresh herbs or veggies.

How to Make Cast Iron Sourdough Discard Pizza

  1. Preheat your oven to 450°F with your cast iron skillet inside.
    This gets your skillet sizzling — key for that crispy crust!
  2. Carefully pull out the skillet and add avocado oil.
    Swirl it around to coat the bottom.
  3. Pour in your sourdough discard and spread it out.
    It’ll sizzle a little. Just gently move it around into a circle.
  4. Drizzle more oil on top and sprinkle herbs.
    I used dried basil and oregano from my herb garden.
  5. Bake for 8–10 minutes.
    The edges should be crisp and the top should look set.
  6. Add sauce, toppings, and cheese.
    This time I used sun-dried tomato pesto, onion, bell pepper, and cheese — but anything goes.
  7. Bake again for 5–8 minutes.
    Until the cheese is melty and bubbly.
  8. Slice and serve right from the skillet.
    No extra dishes? Yes, please! No judgement here. 🤭
