Crockpot Chicken, Potatoes, and Green Beans

- 4 chicken thighs (or any cut of your choice)
- 1 to 2 cups baby/mini potatoes
- 1 can green beans drained
- 1 packet Lipton onion soup mix
- 1 cup chicken broth
- 1 Reynolds slow cooker liner optional, for easy cleanup
Line your crockpot with a Reynolds slow cooker liner.
Add the chicken thighs to the bottom of the crock.
Scatter the baby potatoes and drained green beans over the chicken.
Sprinkle the packet of Lipton onion soup mix evenly over everything.
Pour in the chicken broth.
Cover and cook on low for 6 to 8 hours, until the chicken is fork-tender and potatoes are soft.
Stir gently before serving so the savory onion broth coats everything.
Drain the green beans well or the broth will be watery.
For a thicker sauce instead of a light broth, whisk 1 tbsp cornstarch with 2 tbsp cold water and stir in during the last 20-30 minutes on high.
