Ingredients

  • 4 chicken thighs (or any cut of your choice)
  • 1 to 2 cups baby/mini potatoes
  • 1 can green beans drained
  • 1 packet Lipton onion soup mix
  • 1 cup chicken broth
  • 1 Reynolds slow cooker liner optional, for easy cleanup

Instructions

  • Line your crockpot with a Reynolds slow cooker liner.
  • Add the chicken thighs to the bottom of the crock.
  • Scatter the baby potatoes and drained green beans over the chicken.
  • Sprinkle the packet of Lipton onion soup mix evenly over everything.
  • Pour in the chicken broth.
  • Cover and cook on low for 6 to 8 hours, until the chicken is fork-tender and potatoes are soft.
  • Stir gently before serving so the savory onion broth coats everything.

Notes

Drain the green beans well or the broth will be watery.
For a thicker sauce instead of a light broth, whisk 1 tbsp cornstarch with 2 tbsp cold water and stir in during the last 20-30 minutes on high.
